Chipotle Mexican Grill Spicy Tomato Salsa tastes like the salsa that is available at Chipotle’s Mexican grill. Chipotle’s Mexican Grill is known for making everything nice and fresh. They prepare all of their salsa recipes in their store every single day. You can make a salsa that tastes very similar to theirs. Be sure to pick up product that is nice and fresh, pick ripe red tomatoes that are firm. I will typically choose the ripest tomatoes available, this may mean I may pick up roma tomatoes, or vine rippened tomatoes, or whatever looks best.
Chipotle Mexican Grill Spicy Tomato Salsa
6 fresh tomatoes, diced
2 poblano peppers, grilled, peeled and diced
1 cup red onion, diced
2 jalapeños, diced
1/3 cup cilantro, chopped, discard steams, and use leaves only
1 tablespoon lime juice
1/2 teaspoon sugar
Salt and pepper to taste
In a medium sized bowl, combine all ingredients. Mix well and let the flavors marry in a bowl. I really like to let this set for at least 2 hours before serving. Allowing this to sit overnight is best, but if you can’t do that a few hours will work well too.
Serve with fresh tortilla chips or on top of your favorite tacos.

Tomatoes do not develop flavor unless allowed to ripen on the vine. So make a point to pick out the ripest tomatoes available, this may mean you the tomatoes you chose may not be the ones that are the most pretty. Scent is a good indicator of the flavor of the tomato, look for fruits that are fragrant, the more fragrant the tomatoes are the more flavor that they will have. Stems if attached should have a nice “garden” smell. So be sure to use the ripest tomatoes you can your favorite salsa recipes.
