Three Chili Salsa

Three Chili salsa can be made fresh and in your kitchen. Three Chili salsa contains three different styles of peppers, and is very spicy. The chipotle peppers in here give this a nice smokey flavor. Three Chili salsa features chilpotle peppers which are smoked jalapeno peppers.

Yield: Approximately 2 1/2 cups.

1/4 lb. Anaheim or Hatch Chili peppers roasted, peeled, seeded, sliced
2 or 3 jalapenos, seeded and sliced
2 or 3 chipotle chilies, soacked in hot water until they are refreshed, drained, seeded, and chopped
1 cup tomatoes chopped
2 limes peeled, sectioned, and chopped
1/2 cup chopped cilantro
salt

In a medium sized bowl mix all ingredients together and let the flavors marry in a covered container for at least one hour. Salsa stays fresh for 1 week when kept in the refrigerator.

Tomatillo Salsa is made from fresh tomatillos, these can be found in most produce departments.  Tomatillos are like green tomatoes with papery husks.

Tomatillo Salsa

10 tomatillos, remove husks
1/2 cup diced tomatoes
3 cloves garlic, mined fine
2 jalapeno peppers
1/4 cup fresh cilanto leaves, coarsely chopped
1 tablespoon lime juice
salt and pepper to taste

Remove husks from tomatillos and rinse clean.  Place tomatillos in a stainless steal pot and cover tomatillos with water.  Bring pot with tomatillos to a boil, and then turn the temperature down to a simmer.  Simmer tomatillos until they soften and begin to burst, this should take about 10-12 minutes.  Drain tomatillos and place in a food processor and add garlic, onions, cilantro, and lime juice.  Pulse several time, you can pulse until you get the desired consistency.  Season with salt and pepper to taste.

You can store salsa in the refrigerator for several days in a covered container.
