Garden Fresh Salsa

During the summer, fresh ingredients are abound, what is better than some fresh tasting garden fresh salsa? You may have your own garden, or you may even have a nice farmers market around, so why not make some garden fresh salsa today?
Garden Fresh Salsa
Yield: approximately 5 cups.

3 cups tomatoes finely chopped (about 6 tomatoes)
2/3 cup finely chopped green bell pepper
1/2 cup onion, finely chopped
1/2 cup thinly sliced green onions
6 garlic cloves, mined fine
1 tablespoon lime juice
2 teaspoons vegetable oil
1 to 2 teaspoons mined jalapeno pepper
1 to 2 teaspoons cumin
1 teaspoon chipotle pepper
1/2 teaspoon salt

Combine all ingredients together, refrigerate covered. Salsa stays fresh for 1 week.

Spicy Black Bean Salsa

In this recipe for Spicy Black Bean Salsa, jalapeno peppers are roasted in the oven before they are added to the Spicy Black Bean Salsa. When cutting or seeding hot peppers, use rubber or plastic gloves to protect your hands, and avoid touching your face when working with peppers.
Spicy Black Bean Salsa
Yield: approximately 3 cups.

4 jalapeno peppers
2 cans (15 ounce) black beans, rinse and drain
2 cups frozen corn
1 medium sweet red pepper, diced
1 cup chopped seeded tomato
1/2 cup red onion, chopped
1/3 cup lime juice
2 tablespoons chopped fresh cilantro
2 garlic cloved, mined

Place jalapenos on a cookie sheet and broil for 4 minutes, or until heat begins to blister the skins of the jalapenos. You can also grill these peppers on an grill, again do so until the skins begin to blister. With tongs rotate the peppers so that all of the sides of the pepper become blistered and blackened. Place the peppers in a bol; sover for 15 to 20 minutes. Peel off and discard the charred skin. Remove the steams and the seeds, finally chopped the peppers into small pieces.

Combine the remaining ingredients with the chopped peppers. Cover and store in the refrigerator. This salsa will say fresh for about 5 days.

Chipotle Mexican Grill Spicy Tomato Salsa

Chipotle Mexican Grill Spicy Tomato Salsa tastes like the salsa that is available at Chipotle’s Mexican grill. Chipotle’s Mexican Grill is known for making everything nice and fresh. They prepare all of their salsa recipes in their store every single day. You can make a salsa that tastes very similar to theirs. Be sure to pick up product that is nice and fresh, pick ripe red tomatoes that are firm. I will typically choose the ripest tomatoes available, this may mean I may pick up roma tomatoes, or vine rippened tomatoes, or whatever looks best.

Chipotle Mexican Grill Spicy Tomato Salsa
6 fresh tomatoes, diced
2 poblano peppers, grilled, peeled and diced
1 cup red onion, diced
2 jalapeños, diced
1/3 cup cilantro, chopped, discard steams, and use leaves only
1 tablespoon lime juice
1/2 teaspoon sugar
Salt and pepper to taste

In a medium sized bowl, combine all ingredients. Mix well and let the flavors marry in a bowl. I really like to let this set for at least 2 hours before serving. Allowing this to sit overnight is best, but if you can’t do that a few hours will work well too.

Serve with fresh tortilla chips or on top of your favorite tacos.

Tomatoes do not develop flavor unless allowed to ripen on the vine. So make a point to pick out the ripest tomatoes available, this may mean you the tomatoes you chose may not be the ones that are the most pretty. Scent is a good indicator of the flavor of the tomato, look for fruits that are fragrant, the more fragrant the tomatoes are the more flavor that they will have. Stems if attached should have a nice “garden” smell. So be sure to use the ripest tomatoes you can your favorite salsa recipes.
