Avocado delight salsa is perfect for when you want to create a salsa that is chunky and filling. This salsa combines tomatoes, avocados, black beans, Mexicorn and so much more.
Avocado Delight Salsa
2 pounds tomatoes, diced
2 Hass avocados, diced
1 1/2 C. red onions, diced
1 16 ounce can black beans, drain and rinse
1 can Mexicorn, drained
1/4 cup white vinegar
1/2 cup vegetable oil
1 package Good Seasons Italian Dressing Mix.

In a large bowl combine tomatoes, avocados, red onions, black beans, and Mexicorn, and mix well.  In a small bowl combine the vingar, vegetable oil and dry Italian Dressing Mix. Whisk the vinegar, vegetable oil, and dry Italian Dressing mix well, and then pour over the vegetable mixture. Allow to season for at least 2 hours before serving. Store in a covered container in the refrigerator.
